Almost every build on Ashe suggests taking attack speed items because of that.

Actually, the bottom row is the most universe Ashe build. But you can consider changing some items in different situations. For example, Kraken Slayer and Runaan’s Hurricane are good against tanks, any team might have several tanky champions. But sometimes they don’t so it might be useful to take anti-burst items instead like Immortal Shield instead of Kraken Slayer. If you are sure that you can focus on killing everyone then take Blade of the Ruined King.

Ashe is a good champion but if enemy team has support with lots of control it can be a problem.
General Tips to play Ashe

You’ll want to take Volley at level 1 since it’s by far your best trading tool in lane, and can help you to push.
When you get into lane, you should spam auto-attacks on minions to push as fast as possible to beat the enemy bot lane to level 2. You can try and poke the enemy ADC with free auto-attacks if a good opportunity arises, but for the most part, you shouldn’t be actively seeking these and should instead just focus on pushing faster than the enemy bot lane.
Should you find yourself losing the race though, you should back off when the enemy bot lane is approaching level 2.
At level 2 you’ll be levelling Ranger’s Focus to increase your DPS should you get into an extended trade/fight. At level 3 you’ll usually want to take Volley for more frequent poke, but you can take Hawkshot if you wish to get information on the enemy jungler’s whereabouts or check for an incoming gank.
Whenever you’re shoving under the tower and can’t poke anyone with auto-attacks, you should be auto-attacking the tower to make sure it goes down as soon as possible, since it’s a +650g boost in power for you if your team allows you to take full local gold.
You should be grouping with your team as much as possible to teamfight and siege down towers. Ashe is a decent sieging champion due to her above-average auto-attack range, poke from Volley, and her zoning power with Enchanted Crystal Arrow which can scare people away from pushing her off of the tower.
